Here’s a way to ease into it. Buy a 5-gallon pot for $15 and some bags for $7 and give BIAB a try on the stovetop before you make the investment. I went straight to the 3-vessel all-grain setup, but wish someone had started me here to save me the stress. I still use this for small batches.

Yep, and honestly, any strainer bag will work. I have to look for bigger elastic bags but with these I just cut the band and tied it together at the top.

Something on the scale of 1 gal is probably easiest. Anything smaller, measuring things accurately will be very difficult and your targets (gravity and volume) will be way off. Plus trying to bottle from such a small amount of liquid will be really difficult.
Just get a brew bag and do stove-top BIAB in a regular pot. Then transfer to a 1-gal wine jug. You'll get a 6-pack that way, and it doesn't take up that much space.
