Long time CF developer here. I highly recommend getting a book or two by Ben Forta. I have a couple from him from the CF7 era which were great, and it look like these CF9 books by Adobe will have similar content. It should get you up to speed quickly. Definitely use the online reference guide for syntax though, it's way more convenient.
The blogs skittlekiller and flynnski mentioned are great too. For learning fundamental CF topics, you might have best results with a book though.
For ColdFusion, get the latest WACK, it is considered the bible.

If you just do a few hours a night, you can get through it (do ALL of the examples!!!) in a few months - you'll be able to code just about any web app you see today.
