You should check out the Amber RPG. It's based on the Chronicles of Amber series of books by Roger Zelazny, and it is completely DICELESS.

It doesn't resolve everything with rock-paper-scissors, either. Every swing and every parry is determined by a variety of factors that only begins with the PC's relative attributes and skills, and also takes into account how each opponent roleplays the fight.

I once ran a D&D game over IRC that lasted for 17 months, and I resolved everything using the Amber system. My players told me it was one of the most wonderful gaming experiences they ever had, and one of them took to calling me Maestro all the time. Dice and randomness are not, contrary to what most people believe, always required for a good game.

Amber Diceless RPG is often played by mail in a strictly role playing fashion. Here is a site with some info on a play by email game. It doesn't include the emails however just back story.

Even face to face Amber is much more RP than other RPGs. There isn't much choice since even conflict resolution is done through describing a scene. The game is based on a series of books by Roger Zelazny. Typically the players are the children or grandchildren of the King from the books which gives them certain powers, or the potential for them. Those books give you the world and backstory. The GM runs the NPCs and produces a situation where everyone reacts.
