When are you looking to go? Desolation is a favorite, but basically anywhere in the Sierra has a lot of options. Backpacking Northern California is a good resource: https://www.amazon.com/Backpacking-California-Mountain-Foothill-Adventures/dp/0899974465

If you're wanting to go soon, you have to be a little more choosey to find something temperate. There are a few options in that book for foothills hikes. The Santa Cruz mountains also have some nice options: Big Basin SP, Pescadero Creek, Sam McDonald. You'll have to work around rain though, and most require reservations (since there's about a trillion people living between here and there).
Check out this book. It has plenty of trips to choose from.
