I recently bought this one and it works pretty good.
I have had one of these for years. I think around 5 or 6. Used it at least once a week. Still works perfectly fine. And it is super cheap and easy to use.

Well, if he can get past the gadgety-ness of it, an electric grill (so he can do it year round!) and rice cooker might be good.

That with a vegetable steamer (if they don't already have one) opens up the door to lots of easy and healthy meals.

As for Blue Apron, I wouldn't recommend it. Their meals are delicious, but most of them have a lot of steps and might be overwhelming for someone that doesn't cook much.
I used to have and love this one(http://www.amazon.com/BLACK-DECKER-RC3406-Cooked-Cooker/dp/B000UWD9OW), but it doesn't appear to be in the UK (at least in the same form). With that said, this one (http://www.amazon.co.uk/Crock-Pot-0-6L-Rice-Cooker-Grey/dp/B007XEJ55M) appears really highly rated, and crock pot is a pretty reliable brand. Added bonus, one button!
I love my Black & Decker rice cooker. I've had it for at least 2 years, and started using it more frequently in the last 6 months or so. One button, and it keeps the rice warm until you unplug the unit. I think I paid maybe $15 for it at an outlet mall, and the one I linked is the exact one (though mine has a blue-ish cooking bowl).
Rice and beans my friend, rice and beans. If you're in college a cheap rice cooker is your best friend you can add some rice, some lentils or beans and eat a filling meal for next to nothing.
But my number one tip is after you've taken a bit of time not consuming animal products commit to investigating some information regarding how we use animals.
Whether you read a book like say this one or watching an environmental documentary like this or a much more important documentary on how we actually treat animals for taste like this one I think you'll find some pretty interesting arguments for keeping animal consumption out of your life.

Steaming already cooked meat while rice is cooking heats it up quite nicely.
