For me, the last thing that kept me up late was probably reading the most recent chapter updates for The Wandering Inn. It's a web serial rather than a traditional novel, though, so I'm not sure if it counts.

In terms of traditional novels, the most recent one that I binge-read was probably Blackflame by Will Wight.

I also have a tendency to get hooked into Brandon Sanderson's books, especially toward the end.
