With your Food Science background I'd suggest reading through Beer by Dr. Bamforth, he runs the Brewing (Food Science) program at UC Davis and theres a wealth of knowledge you can gain out of it

Slightly more advanced is Brewing by Michael J Lewis, gets a bit more into the Food Chemistry end of brewing, but still plenty to gain.

If you can read those and coincide with getting some time in a brewery I'd then suggest looking at Brewery Operations Manual, it'll give you some good ideas on ways to attack a startup brewery on the cheap. Again, all of these coincide with hands on experience so you'll fully understand the purpose of what they're writing.

I have no experience with it but it has just become another part of this hobby I am obsessed with, learning more. Read, read, read. Currently I'm going through the Brewery Operations Manual and networking with those that might be able to help. Sister is good with design, logo. Buddy I play hockey with has a construction company. Guy I knew in high school opened a brewery and had some insightful advice, find the big investor and get them on board because they'll have buddies that are also big investors. Where I see it you have to have something or be able to do something no one else is better at doing. Lots of us can brew great beer but maybe the town you're setting up in doesn't have great brick oven pizza, fill that niche while also having a brewery. Here's to one day living the dream, cheers!
