I know this may sound dumb, but I solved a lot of previous Android Auto issues with a new cable. The type C cables I had that came with my 6P and ones I got from Fi caused hard reboots. When I had my 6P I chalked it up to the phone, then it got worse with my 2 XL. New cable and no more hard reboots... Occasionally disconnects, but it's way more reliable than it used to be. I'd buy a high quality Benson-approved cable and see if that helps.

Edit: This is the cable I recently bought for reference... https://www.amazon.com/gp/product/B018JINCVS

Edit 2: There is also a hidden developer menu in AA. I enabled 720p / 1080p output and also "allowed unknown sources" just in case any of that was causing issues. https://www.howtogeek.com/271132/how-to-enable-developer-settings-on-android-auto/

Hi, I just purchased this portable charger:

Anker PowerCore 26800 Portable Charger

I also bought these cables that are Benson approved:

1ft USB C to A

6.6ft USB C to A

And this wall charger:

Anker 2-Port 24W USB Wall Charger

DISCLAIMER: Get confirmation before using that wall charger on the Switch. I assume it will be fine, but I want to make sure.

I had a similar issue with my Pixel 1. I would get frequent disconnects or it wouldn't connect. I bought a very short 1FT cable that seemed pretty decent quality and haven't had a problem since. Its really a shame the whole connection, phone-cable-car, can be so touchy. This is the cable I use but looks like its no longer available.
