I'm glad you came here to ask about this, because we need to set you straight. :)

Do not register for cheap knives. This is definitely a matter of, "you get what you pay for." You don't have to register for a crazy expensive set, but $40 knives are going to be worthless really fast. We registered for these ones, around $100 (normally $150), but they have gone on sale for as low as $80. That said, registering for individual knives is the way to go if you have the time/fucks to give. My fiance and I are not gourmands, so this route worked for us. The knives are a single piece (no concerns of 'separating' from the handle or getting wiggly/loose). They're sharp, and they perform. We're thrilled with them.

Wash your knives by hand as soon as possible after use. Hand dry them, put them back where they belong. This keeps them nicest, longest.

Anyway, this cutting board is pretty cool. I used it for the first time the other day to wash, rinse, and cut some strawberries and it was quite nice. :D

I have this set of Chicago Cutlery knives and we've noticed they are getting dull and some of them have tiny chips in the blade. Are these worth getting sharpened by a pro?

>9) You do not, in fact, need a knife collection. You need one large workhorse knife (chef's, santoku, or cleaver), and either a paring knife, a utility knife, or both. If you find you actually need another type of knife later you can buy a high-quality single. Don't feel you have to spend a lot of money on your knives, either. As long as it holds an edge and feels comfortable in your hand, you're fine.

I am so in agreement on this. I've had other "foodies" tell me that any knife that's not on the level of Shun or top of the line Henckels is worthless crap. I have a set of Chicago Cutlery that cost about $70 for the block on sale, 7 good knives, and 8 steak knives. They are fantastic and I am completely in love with them. And I only really got the set because it turned out almost the same price as buying the three I wanted separately because of an after-Christmas sale.

I use the 8" chef's and the 8" santoku most often. Utility knife almost never, the standard paring knife occasionally but nowhere near as often as the bird's beak. The boning knife gets used when I'm breaking down a chicken, but not for much else, and if I didn't have it I'd just use the chef's knife for that, too. The bread knife will get a lot of use when I'm on a bread baking jag, then almost none while I'm obsessed with something else. The ones I actually went looking for were the santoku, the serrated bread knife, and the bird's beak. I would be totally fine with just those three.
