I've been looking into this puppy for a very long time now. It's super expensive as far as these things go, but I think I'll spring for it.

I wanted something with a compressor and a big capacity, so that already took me up to the $300+ range. What threw me over the top is that I've really always had an interest in potentially starting an ice cream or gelato business, and I'd have to do a lot of testing at home. Very few models seem to be able to freeze anywhere close to the time it takes this, and freeze time significantly affects the final product.

What also sold me on it is that of all the other ice cream machines on Amazon and elsewhere, this one had mostly 5 and 4 star ratings with a couple 3s thrown in there but absolutely no 2s or 1s. Even though 2s and 1s are sometimes outliers anyway, if I'm spending that much on an ice cream maker, I want it to be perfect.

A more affordable option might be the Cuisinart Ice 100, which seems to have pretty good reviews.

So unfortunately this stuff kind of tastes kinda funky and the texture is awful. With keto you want a high fat low carb option for ice cream, which due to sugar alcohols Arctic Zero really isn't.

A better option for making your own ice cream would be to use a recipe like this.

1 pint Land O Lakes heavy cream (this stuff has 0 carbs, all the rest seem to have a smidge).

1/2 to 1 cup granular splenda (not the liquid kind, you need granular sweetener to help with texture) depending no how sweet you want it

1/4 teaspoon Xantham Gum

1/2 teaspoon Guar Gum

2 scoops of either IsoPure or of Nectar Protein for flavoring. Both of these offer a bunch of either 0 or next to 0 carb options.

Mix it in a blender just until you have added a little air in the heavy cream so it has the consistency of like pudding, but don't overdo it or you will turn it to butter...and frozen butter isn't delicious.

Then toss it into an ice cream maker. If you don't do a lot of ice cream, then get one of those ones that has the frozen bowl like THIS one, or if you're like me and the loss of ice cream made you super sad, then bite the bullet and upgrade to a unit with a compressor like THIS or if you want VERY nice one then something like THIS.

I use this ice cream for my Keto fat bombs, and it's amazing. You end up with something like THIS for your metrics, 0 carbs, 12 grams of protein and 40 grams of fat with 453 calories for a 1/2 cup serving.

I used splenda for the sweetener.

I did not pre-chill it, but it got cold pretty fast.
After churning it definitely increased in volume, but I don't think anywhere near double
I think I'd mostly describe it as soft serve consistency, maybe with a bit near the outside almost completely frozen.

My recipes doesn't include eggs. I use the recipes from The Art of Making Gelato. I use a Cuisinart ice cream maker but the biggest thing was finding the right container for freezing the gelato once it's done. I use this container and seems to keep the gelato from freezing too quickly so it stays more creamy and it's been the biggest difference maker for me.
