There are way more than this but these are all I can think of off the top of my head. Some are Dragon PoV because I strongly prefer to read those.
There's a whole book series on pretty much this same premise. It's young adult, but entertaining none the less.
Dealing With Dragons, by Patricia C Wrede?
Dealing with Dragons and anything by the same author. Badass princesses and girls breaking the mold and being bold.
Agreed!

It's aimed at kids but I still love it so much. It's about the Enchanted Forest. Which is everything an Enchanted forest should be! (I wish someone would just write an adults book about the intricacies of that place!)
Anyways, it also has lovely feminist tones and a general great message. Makes me almost want to have kids just to read this to them!
I dunno, I thought it was a pretty entertaining read.
