I warn you: Everything below is going to sound complex, but they're really not. Everything is light on ingredients, but heavy on "holy crap, YOU made THIS?"

  • Breakfast: Nothing will impress more than Eggs Benedict. Kenji at Serious Eats has a pretty solid write up that was covered by Babish as well. I will say that you want to do a practice run on the poached eggs, or find a way to cheat with an egg cooker. I've an order of those silicone poaching molds that arrive today, so I'll be trying them out tomorrow morning on my own before the big show Sunday.

    The next two are probably interchangeable for lunch/dinner, however they assume you have a grill (and a thermometer. do NOT cook pork tenderloin to 160F or I will find you. Medium rare (135F, maybe 140F) pork tenderloin is melt-in-your-mouth tender.

  • I highly recommend this Grilled Chicken Cordon Bleu recipe for just about any summer event. It's amazingly easy and delicious. Buy extra lemons and toss the halves on the grill, because people are going to want to squeeze them over the chicken and lick the plates.

  • The other option is a grilled pork tenderloin sandwich. Make a garlic aioli and some pickled red onions ahead of time, as well as marinate your tenderloin. Here's a pretty solid choice from Alton brown. Bring it all over, toss the tenderloin on the grill as instructed, let it rest a few minutes, then slice about a half inch thick. Serve on a nice bun with your pickled onions, some baby spinach (or arugula/rocket from the cordon bleu), and your garlic aioli.

    Also, make extra of the pickled onions and just leave them out on the table. Trust me, they'll disappear like candy.

idk If I can post this here but legit I am super into sous-vide and I did the egg thing as well but for the effort it didn't seem worth in my opinion from a quick breakfast pov bringing it to temp etc. etc. based on my mornings

Fucking fire it works perfectly I am obsessed with how easy and quick this is. bring the water to a boil.

and then just put them in and close the lid. 5 minutes no more no less for me and its always perfect always easy.

Not an ad or anything but it just seems more practical for me versus starting the sous vide and trying to find that perfect temp and then waiting for it to heat up etc etc.

So many people say to stir it and that has always ended up as eggwater for me. I find vinegar, sliding it in from a shallow bowl, and using a slotted spoon to keep it together to be the best tactic.

But if you don’t want to practice you can always cheat.

If you’re really still struggling you should just Use some of these egg poaching cups or the egg poaching tray.

Usually I just make soft boiled eggs tho.
