about the 1 mile question. Not likely at all. You can add power to "yell" your signal louder from the WAP but your reception is limited to the size and style of your antenna. that Engenius antenna will work for maybe a block reliably. You can extend your range by having equivalent antennas on both sides of the connection.
This looks consistent with what my own investigation in preforming the same project led me. I have a similar plan, but need a more suitable antenna. This lead me to looking for an omnidirectional. I looked at several comparable antennas to the one you found. I found them slightly cheaper on Amazon (crap, there was a 15dBi somewhere, this is a 12).
When expanding again, you should note that you can get a 8dBi outdoor omni for less than half the price. Don't forget you likely need a pigtail to convert to SMA
My project is intended to provide an offline Wikipedia mirror, TeamSpeak (chat and VIOP), Friendica (Facebook clone), Gallery3 (image host), and anything else I can think of.
We have towers with an antenna like this on a Ubiquiti Bullet M2 and trucks with the same Bullet M2 and this antenna. We're able to get out about a mile; onmi antennas should work just fine for you. You might want to investigate if you need 5Ghz though since the 2.4Ghz range might already be saturated if everyone else has a similar setup; run a tool like Inssider (version 3 was free) to see what's out there and to select your channel once you have it up and running.

you will need a major boosted antenna, and Ubiquiti won't do it.
get two open mesh devices the OM2p units
www.open-mesh.com and a nice boosted outdoor antenna or two with an amplifier.
I have one unit setup with this bad boy and get a 2 mile radius pretty easily out of it
