I did a quick mock of your spending. Assuming you'd put all your purchases on just the card, this is what you're looking at. $47 back for uber, $50 for doublecash, $56.25 for Freedom Unlimited, $55 for amazon. I'm assuming you've bought amazon prime and get the 5% back rather than just 3% back.

Even though the Freedom Unlimited gives you a better return than the DC, I'd still recommend the DC due to warranty and price protection benefits being significantly better than anything anyone else offers.

If you indeed spend 25% on amazon every month, the Amazon card could be significant. Generally I buy large things from amazon, and I use price trackers to make sure I'm getting the best price, so I use my doublecash instead for the warranty and to make sure I get the best price, unless it doesn't need an extended warranty.

I think you'll find that having more than two cards you use primarily will be a headache not worth attempting. That being said, the Amazon card doesn't have to sit in your wallet. Just use it on amazon and leave it in a sock drawer. Use the Doublecash for high value items. Use the Freedom unlimited on everything else except for dining/travel, which you use your upgraded CSR. An issue I have with the CSR and CSP for you though is that you do not travel enough to warrant such a card. The CSR requires $6450 in bonus spending to outperform the Doublecash, and the CSP requires over $10k to outperform the doublecash. They both require over $20k/year to truly outperform the Uber card.

From a cashback and benefit perspective, I would recommend dropping the CSP and getting an Amazon card for your amazon purchases, getting any Citi card's SUB and product change to Doubecash, then get an uber card for dining/Prime discount/cell insurance. You'll be spread out between 3 banks with 3 cards, carrying just 2 cards in your wallet (one is MC and one is Visa with no FTF), and you'd earn $78.75 cash back per month according to the image I sent above.

However, if you want to churn, then follow the flowchart: https://i.imgur.com/3XOcRlT.png and buy something like this: https://www.amazon.com/dp/B015YOOE0I to hold all your cards as you sign up for more and eventually cancel them. It's simple to do, since you just use the same card and ignore all bonus spend, as the signup bonus gives you 5-50% back on all purchases. Once you've completed the bonus, drop it in your holder and set a reminder to cancel the card if it has an annual fee up to a year later.
