I haven't had issues with my laptop and humidity because it's in fairly constant use. Our last house had a dry box that I kept my camera in, but barring that, I highly recommend a dry sack with a reusable silica pack.

I appreciate your ingenuity, but I don't like your solution. There must always be some way to get the windshield glass warm enough to cause the fogging on it to evaporate (assuming the car's heater is working and has a minute to warm up), and I'd rather throw some electrical power at the heater than have to swap kitty litter every so often.

That said, do whatever works for you. If you just want a desiccant, there are types of desiccant that color-change when saturated and can be baked dry again.

It depends; if your cameras are primarily stored in a climate controlled space (like, your home with central HVAC), you may not need to worry at all. If you live in the tropics or on an island (look how many lenses from Japan on eBay have fungus) and your gear is stored in warm and humid conditions, the camera bag won't help - it's too open to the air.

The best prevention would be to get some sort of plastic storage box, like the kind for storing sweaters and winter clothes, with a reasonably air tight lid. Buy a set of reusable desiccant - when it changes color, you bake it in the oven - many sets include the desiccant beads and containers to let them absorb moisture. Keep your gear with optics stored there when not in use.
