Ugh, hand-crank can openers. I was so happy when the soup companies started putting the easy-pull tabs on their can lids.

My partner had an awesome low-tech contraption at the last place we lived: a wedge-shaped can opener mounted on the bottom of the cabinet. You just pushed the can lid into the wedge and rotated. Fucking brilliant.

My (tiny, small-handed) mother had this great device for opening jars. It was just a pair of rails at a slight angle to each other \ / that mounted on the underside of a cabinet. The rails had rubber on the interior. To open a jar, you slid the jar into the rails until its stopping point (it accommodated all lid sizes) and then used the strength of both arms to turn the jar, leaving the lid behind. Arm strength >> hand strength (and ingenuity > brawn).

EDIT: it looked something like this. This is not a plug; I suggest search terms "under the cabinet jar opener," or just to build one yourselves.
