What is your background?

If it is not in power engineering than using software for you examples might not be the best way to approach this.

I would recommend you pick up the following book which introduces energy economics and locational marginal pricing which will aid in your understanding of electricity markets.

What is your target audience? If it is not power engineering course than 2 bus/3 bus examples can explain most of the basic concepts.
