To follow up I just got home and opened up the mic adapter. Plugged it in I have this microphone https://www.amazon.com/gp/product/B00ZR4N2CM/ref=oh_aui_search_detailpage?ie=UTF8&psc=1 and when I recorded it didn't import in as one channel. This is a good sign I think (I'm very limited in my knowledge. I will try to get access to an actual stereo mic soon and report back.
