You can get them. They are just not produced in volumes that make them a viable crop. Doing so greatly increases the risk of the Panama Disease wiping them out.

It hasn't fruited yet... i need to do more research on how long it takes. It was planted as a sapling.

Ironically, I grew it only because someone said it was extinct and I found it... just the one.

You'd be surprised.

You can buy corn seeds, or if you want to be really hardcore, you can grow its ancestor, teosinte, and seeds are readily available.

Modern bananas are all pretty much clones of the Dwarf Cavendish variety, but the previous commercial version, which nearly went extinct back in the '50s, the Gros Michel, can be bought on Amazon., or if you want to be super hardcore, the musa acuminata ssp. errans, which was an ancestor further back, is still grown, but harder to track down seeds for.

Obviously, all sorts of species have been lost over time, but it's always amazing to see what's still out there, like the mammoth squash grown by the Miami Indians of Indiana for 5,000 years or so.

just because there is a hybrid that is more resistant does not mean the original cultivar is extinct

Not quite extinct. You can still get Gros Michel bananas but they are VERY hard to find. You can even grow your own "Big Mike" tree at home.
