first you have to choose a style,

Dress, port, Pilot, Divers, plain or chronograph

Then you have to consider if you want a mechanical or a quartz,

The quartz being more accurate and having more functions, as well as being cheaper, while the automatic is more distinguished, has more prestige and some people feel romantic towards mechanical movements,

Also which brands you like, if you want a small butique watch like christopher ward, Steinhart, Lum Tec, Nomos, or a big name watch like Certina, Tissot, Hamilton, Seiko, Longines.

You can also strech your money a bit more if you buy used but you have to find a trustworthy source to avoid fakes or mistreated watches,

if my limit was 1K i would probobly go for :

Hamilton Khaki Chronograph

Hamilton Jazzmaster

Seiko Shogun

he reason for this is that Hamilton has its own variations of the Eta made movements and that Seiko are always good value and in house manufacturing, and the Shogun is an amazing titanium diver under a grand.

That's good to hear. I read that Hamilton was a US watch maker, but I didn't know if that was a good thing or a bad thing.

For Tissot my favorite is this one. It's really modern but I'm an engineer so I'm a sucker for skeletons.

For Hamilton, I like this one. It's classic, totally on the other end of the spectrum, but my gut tells me a classic watch will stay with me longer. Also my wife thinks if I want a funky watch to just get an Invicta and save the money.

Speaking of which, does it matter that the Tissot is a wind up and the Hamilton is automatic? In terms of quality, durability, etc?

Anyway it's good to know they're both on the same level so I can just pick the one I like most... which is going to be fucking impossible :)

Hamilton Khaki field watch should check all your boxes. Get a couple straps - stitched leather for daily/dressy casual wear; gator print if you want to dress it up; NATO, canvas or rubber strap if you want to dress it down.

If you want a mechanical chrono, only option at that price point is a Seagull 1963 (to my knowledge). I haven't seen an automatic chrono in the $400-$700 range, but I'm no expert.

Personally, I'm a big fan of Orient watches. Great prices, very nice movements and can find some interesting complications at that price point (day/date, power reserve, 24 hour clock, world time). You can get a really casual Orient field watch and a nice dress watch easily for $500. With your $700 budget, you can buy one of the nice executive watches (Orient Explorer, Sightseer, etc.) for dress wear and pick up something else more suitable for casual evenings.
