Hario V60+Filters, Bonivita Electric Kettle (or any goose neck kettle), a kitchen scale that reads in grams, a stop watch/timer, and some coffee. Done. If you have the extra money get an electric burr grinder, if not just have the roaster or wherever you buy the coffee pre-grind it for pour over.

I see them everywhere where I live. It's also stocked on amazon for $11 for 200. It takes a few weeks to get to you so you just need to do some minimal planning ahead like ordering when you're down to 100.

u/lumpy_potato thanks for the suggestions. I am using Hario brand filters. This morning I went for a courser grind (Encore set to 22), and it still took around 4 minutes.
