But yes you can make this work with a 1/8" male to female rca adapter like this one.

I also rooted my Nexus 7 and installed Timur's rom. That was a headache and not needed because you can duplicate the functionality by using Tasker, a Nexus 7 task scheduling app. But to install Timur's ROM basically you need to unlock the bootloader, install TWRP recovery, then install Timur's USB Host ROM. That ROM gives you the ability to plug USB devices like thumb drives into the Nexus 7. It also gives you the option to put the tablet into deep sleep when you turn your car off.

I like my Turtle Beach PX4 headset and use it w/ an optical switch for my PC, Xbox 360 and PS3.
You can use one of these and 2 RCA cables, but you'll have to control volume on the PC. If you want inline volume control you can use something like this or this.

Is it powered? If it is you should be able to run an RCA to 3.5mm adapter to get the LFE signal into it from the AVR. You'll now need a sub cable to hook the AVR to the adapter. I would get a longer one that you think you need as it's cheap and you never know if you're going to rearrange in the future.
My other thoughts are how much power does it provide and how large are the drivers? I'm wondering how it will sound in a larger space vs being on a desk where it was designed to work. In the near field you don't need too much power or large speakers as you're right there. As you move away from the speakers you'll need more power to get to the same volume level that you had up close. Give it a shot and see what happens.
Turntable will output either line-level output (hopefully), or more likely, phono-level output. Phono is quieter, so in that case you'll need a "phono pre-amp." You can try a RCA to 1/8" adapter to see if you get a usable volume, here's an example. Radio Shack is a good place to grab one of these locally.
