I wonder if you try, you should reduce the water content of the batter. When making a pancake on a pan, it "rises" through water bubbling and evaporating.

You won't have the same effect with a sous vide unless the water is at boiling temps... but a fun idea would be to place the batter inside a whipped cream dispenser (like below) and dispense the batter into a mason jar or something so the batter is aerated. You'd have more of a sponge cake than a pancake but you can always broil it after.

Made two batches last night and froze them overnight. 8oz hwc and 2tbsp peanut butter (peanuts and salt only) and another of 8oz hwc and 2tbsp coconut butter. Came out as hard blocks so popped them out of containers and cut off some. It is ok. I wouldn't do again without sugar substitute. I am staying away from sugar substitutes for now so have to shelve this idea for awhile.

If I were to do it again with sugar substitute and freeze it I think it would be best to use a Cream Whipper and do dollop on a cookie sheet and freeze.

You want a regular 20 ounce paintball canister, and the Taprite regulator that is specifically designed to thread right into one. Realistically 1 pound of CO2 will do 1/2 barrel of beer, so a 20 ounce canister will last you a bunch of fills, so while the initial outlay is like 75 bucks (for the tank and the unit) you're looking at like 1-2 dollars if that per blanket you lay down. MUCH cheaper than buying the one shots.

If you don't brew that much, get a Whipped Cream dispenser (doesn't have to be that one, ANY of them will work) and then get disposable creme charges. N2O is also heavier than air (like CO2) so you'll get your blanket.
