I would try cleaning the port on the PS2 then. I'd suggest picking up another cable if that doesn't clear it up.
I use these, and they haven't given me any problems.
The manual doesn't really say what "full screen" is (i.e. whether it stretches a 4:3 image to 16:9, or something), so it's hard to say, just from seeing the manual.
Still, you'll need to buy some kind of conversion hardware. Something like this will probably have some conversion lag, but that really can't be helped without going for some pretty expensive hardware.
The Playstation can also do component and s-video output, I believe just with the appropriate cables, and then the appropriate conversion box. It wouldn't help with lag, but component and S-video both provide a clearer signal than composite does.
