I agree - a chef's knife. I have a hollow edge knife similar to this one (don't buy cheap knives - you get what you pay for).

It fits my hand well, I rarely have to sharpen it, hone yes, but actual sharpening is rare. I'm sorry for the unpopularity on this one, but I also wash it in the dishwasher (gimme a break, I have contamination OCD) and it comes out clean and ready to go.
