Super stable. I use the Joby Suction mount with the GorillaPod Arm. Between that and the digital stabilization in the camera the picture comes out great.

I've seen this gets posted frequently. Here's a high level overview with some specific parts.

You need at least one camera (duh) and a way to get audio. The camera can be gopro or knock off, but you need a sturdy mount like this or this or this.

The easiest way to synch audio is to connect your camera straight in to the audio panel, with a cable like this or doing the "stuff the mic in your ear" trick that was mentioned already.

You could also get a billet mount like this to get some awesome external views and/or a wing strut clamp like this but your battery may not last as long as your flight!

Then head on over to your favorite video software and go at it!

I have my sensors mounted on the wall in the corners of my room, about 6-8" from the ceiling. They are working great so far (3 sensors).

I rent so I can't use screws. I got 3 of these mounts. Unfortunately the suction cup doesn't work as great as I hoped but I put command strips on them to mount onto the wall. Oh and also some adhesive cable clips to give some slack to the cable that is going to the sensor. That prevents any tension from pulling on the sensor.

I have the Joby suction cup now, and the long flexible arm causes too much vibration. Gonna try these to see if they perform better.

Oh yeah this Joby Suction Cup GorillaPod looks really nice, thanks for the suggestions!

Not sure if you have any experience with such applications, but I'm wondering what mount would be best for my motorcycle helmet. I'd like to mount it on the chin area of my helmet to get a centered riding perspective, but I'm not sure what would really fit well there.

Edit: The weird GorillaPod arm seems like a horrible design, but maybe I'm just not understanding it. Seems like you'd need to pull out a level every time you wanted to set up a shot because it'd always be a bit slanted or something since it's got tons of adjustment points.
