Not a strictly culinary answer, but if you aren't able to find a good substitute, consider getting your BF the gift of a good lactase supplement. As a lactose intolerant person, it's a real lifesaver.

I take it one step farther and take lactose pills from "Dietary Advantage" that are basically bacteria-on-a-pill (oversimplification) that help you digest lactose all day. One pill in the morning and no worries the rest of the day.

Edit: I have a subscription from Amazon for the 3-packs (96 doses total) I think this was the most cost-effective solution and I don't have to remember to stock up.

May I suggest a probiotic for your lactose intolerance. It's something you take daily, but I find it works much better than taking lactase with each dairy consumption. Plus, I find it to be much cheaper if you're planning on having dairy daily anyway. I will warn you though, that you should wait 3 or 4 days after starting before consuming dairy and those first few days were filled with bloating and gas (though not as bad as eating dairy without anything).

I will very very very strongly recommend Schiff's Lactose Defense Probiotic. Lactaid did not work for me, and I can eat half a pizza with this without issue. Sold at Amazon, Walmart, Walgreens, and probably more.

I'm Lactose intolerant, as well as having issues with FODMAPs (short chained carbohydrates), which I think is very similar to what you have. I also have lots of allergies, including oral allergy syndrome and can't have uncooked greens of any time, plus lots of other foods that have fiber. I'm now on the Keto diet and loving it! I'm good with almost all the foods, and finding out a lot more about lactose intolerance. For example, harder cheeses and higher fat milk products like heavy cream, have very little if any lactose in them and I can eat them. I also didn't know there is lactose in wine, that was heartbreaking. Also, if you're out to eat or possibly have lactose, these help a lot, they're the only ones that work for me. Best of luck!

You don't have to be lactose intolerant. Simply buy this and take 1 pill per day. After 6-8 weeks you should no longer be lactose intolerant.

I was lactose intolerant for nearly 40 years. Went through a box of lactaid a week. I stumbled upon those probiotics last July. I took them daily for 3 months, and after 2 months I was cured. I haven't taken them at all in the last 3+ months and I am still cured! Best $30 you'll ever spend.

I've always been a little iffy when it came to lactose products, so when I started Keto Chow with heavy cream I was taking Digestive Advantage Lactose Defense just in case. Turns out it wasn't necessary. Cheeses and other ket-friendly dairy products are pretty low in lactose anyways. I really think all the carbs in my old diet was the root cause of my digestive issues and probably had little to do with lactose.

Hey, I'm extremely lactose intolerant so feel free to ask me any questions. Having a stomach ache within 20 minutes of diarrhea seems pretty reasonable. And typically if your diarrhea is extremely watery and runny its typically from the milk. I think as soon as your body realizes it can't digest the lactose it begins to just dump it from your system.

If you want some good solutions, I've been taking these pills for a year now and they work great, you can take 1 every other day and you don't need to worry about dairy

Try giving these a shot once. I use to to be the same way with taking a lot of pills. I take 1 of these before i have dairy and im good to go for quite a bit. I can eat a whole pint of ice cream or a large pizza on just 1 pill. You sometimes might have to take 2 depending on how much dairy but its pretty easy to judge and obviously varies for everyone. I found these about 6 years ago and they have been very consistent. You can find them cheaper in most local stores rather than amazon.
