I highly recommend Mastering Basic Cheesemaking by Gianaclis Caldwell. Mary Karlin is a good book that reads more like a cook book. Be sure to go on line to Karlin’s website to make note of her errata sheet. Lots of typos so be sure to check it out.

I’ve met both at our cheesemaking club in Santa Rosa and they know there stuff. Of the two, Gianaculis has a better book.

Side notes: I tasted the actual cheese on Mary’s book cover, I mean that exact cheese. She had folks at The Beverage People test recipes and that was one. I won 14 ribbons at the Marin County (Calif.) fair and was very into cheesemaking for a while until I segued more into beer.

I learned most from the cheesemaking forum.

Edit: I don’t think Rikki’s book is very good and I’d avoid it. The makes are good but the rennet instructions leave you to guessing. Mary’s book is an attempt to have the reader use specific products so the makes come out. If you want “how to brew” I would consider Caldwell.
