Things like Sno-Seal will waterproof them, as long as you follow their directions for when to reapply. You can also use a leather protecting spray like this. I personally prefer Sno-Seal because I have a better idea of what's in it (beeswax, mostly).
Otherwise, regular cleaning and conditioning (whenever the leather feels dry, looks light, gets dirty, or every few months) should work out well!
Both those polishes are exactly the kind of stuff I'd try out. I use Kiwi polish, but these look very similar. However I'd highly recommend bringing your shoes to a cobbler in person- they may let you try it for free.
Unfortunately saddle soap probably won't work- it can't put colour back into your shoe, only remove superficial marks.

I bought and used this for my killshot 2s. They seem fine and didn't discolor or anything but I haven't really worn them in conditions where they could get dirty.
