I have a couple recipes I make. The first one is an Alton Brown recipe and makes a more teriyaki type flavor. His recipe calls for honey, but I add a pack of sweetener to it for sweetness instead.

Alton Brown Teriyaki Beef Jerky:
-1.5 pounds flank steak (or round steak, london broil, whatever) cut into strips and put into a large ziplock bag
For seasoning:
-1 packet of sweetener (optional)
-1 tsp red pepper flakes
-2 tsp black pepper
-2 tsp onion powder
-2/3 cup soy sauce
-2/3 cup worcestershire sauce
-1 tbsp liquid smoke
mix this together then add to the bag of meat and get everything good and coated. You can marinate for 12 hours if that's your thing, but I usually don't. Put in deydrator at 160 for 5 to 6 hours. (One thing i've found that helps is if you pat down the strips with paper towel before putting in the dehydrator, otherwise it makes a mess. You might lose a bit of flavor, but cleanup is MUCH easier.

Simple, regular beef jerky
-Per 2 pounds of meat mix in:
-2 tbsp liquid smoke
-2 tsp coarse black pepper
-2 tsp sea salt
-4 tsp garlic powder

Beyond that, it is easy to experiment. Add other spices, add more or less salt etc. I use this dehydrator along with 4 extra trays and it easily handles drying all 8 trays full of meat. Good luck!

Nods. I have this - not really ideal for liquids since they need to be flat. maybe I can get a spacer for it which is just a ring and then I can stand them up.

I have this one and it works great. The slightly smaller cheaper version can be found here. It looks like it is the top rated one on amazon but was a little small for my needs.

I've been dehydrating my own meals for almost 20 years for canoe outing of different duration (20 to 60 days). This very cheap book is the best we found on the subject, it has both methods and recipes. We use a classic American harvest dehydrator and a good old foodsaver vacuum sealer (any model will do) for preservation. If your camping trips are shorter you can do without a vacuum sealer.

The usual difficulty is dehydrating proteins. So we cook and dehydrate our own ground beef but we buy chicken and egg powder.

It's kind of a lot of work but it's WAY cheaper and taste WAY better than the ready made stuff. It also allows us to adjust portions size for what we need (or want :) ).
