YMMV, but it helps me to think of the urges as coming from something else inside me, like a separate entity. I find it easier to say no to that than to myself.
I read a book that called it the Pig, but since I was watching Dexter at the time I went with the Fat Passenger.
Read Never Binge Again. The Kindle book is free, and it's a short read. (Writing is not great, and a bit gimmicky, but the psychological tools work.)

You're not addicted to food. You're addicted to the PLEASURE you get from eating. Your eating more than enough calories.

Your brain stem (prehistoric brain, lizard brain) only understands pain & pleasure, kill, mate & eat desires. If you could press a button and trigger your pleasure center, your lizard brain would make you press that button until you died of starvation.

You need to learn how to ignore those impulses from your prehistoric brain, and let your reasoning brain, which cares about long term goals (like not getting diabetes or having a heart attack), take over and GOVERN that lizard part of your brain.

I haven't binged in 6 weeks (not a long time, I know) since reading the book, and I used to binge EVERY NIGHT for the last... 30 years or so.

I've always struggled with weekends too. The weekend overeating gets so sickening, doesn't it? Monday can be so disappointing. The thing that has helped me is that I finally got sick of my own behavior enough to do something about it. I had to really grasp the fact that everything I eat has a consequence. Every little thing. Either it will get me closer to my goal or further away. Having this awareness has helped a lot but that doesn't mean I still don't make choices that take me further from my goals. It happens and probably more than I'd really like - but the most important thing is that awareness has decreased the poor choices. Every little bit helps! Good luck to you. If I had one suggestion I would point you in the direction of Never Binge Again by Glen Livingston. The Kindle edition is free! That book shifted my perspective and helped me a lot. It really could be called, Never Overeat Again, because it's not just for binging.
Get this book. Read it cover to cover. I have a serious problem with what I call a slippery slope. It always starts just like you described with just one bite that snowballs into regaining weight until I can knock some sense into myself. This book is the only thing that has helped. I've read it 3 times since November. Plus it's got a nice sarcastic tone that I like.
