NPKC Top Custom 61 , I'm a layman at best but these seem to be pretty decent little doo-dads. And at $19 - why not? haha.

Bought these NPKC keycaps because they were super cheap. The overall feel is pretty nice (compared to the OEM caps) but there's some inconsistencies on the bottom finishes and the modifiers are pretty faded already. Overall its a good deal considering the price.

Yeah. what I'm trying to find out is what makes these "knock-offs". What's the difference between them and the $200 sets? this whole keycaps thing sounds like a marketing scheme

Not a full set, but the Vortex RGBY modifiers set is nice. I have it, very good quality. There are also some NPKC sets like this and this. I can't personally vouch for their quality though. Beware it does look like they are shipping from China and will likely take a while to arrive.

I would love a "classical" colorway like White on Black with the big SA font (as long as it's dye-sub and not engraved), or Black on White like Ice Cap.

0.01 on Discord also suggested there might be a MIX Granite coming soon. I'm definitely in favor of copying popular existing colors. A copy of the YMDK Dolch would be great too.

I'm a fan of the legend, color layout, and printing on the mod keys (I'm usually a fan of shape-only mods, but something about this speaks to me...)

I found it here on amazon (non affiliate link) and they look like a good price for PBT in a nice legend, but if I can find this in DSA to put on a black Royal Kludge I'm considering... (or worst case a MagicForce68 depending on the RK61 compatibility with Mac...)
