And then I cut the cucumber into 3-4" pieces for easy de-coring

You cant do it when they are raw becuase the inside will dry out and wont be as fluffy but if you wait till they are fully cooked they might be too fragile to properly cut them without mashing them, it must be done in a half way point.

Oh wow, you probably don't need anything that specific. I use their general Apple Corer for -so- much, including coring apples!
