I went with the Polk Melee. While technically made for the 360, they send the XBOX One microphone attachment ($25 value) and a mic add-on to make it work with the XBOX One. I am awaiting the add-on for party use, but really like the fit and sound so far. I'm no audiophile, so take a look at other reviews and do some homework. In my humble opinion, this is a great product at the price point.
I snagged it for $45 last week. Looks like a little more expensive now.

This might get long, but here's my suggestion/take:
I am also in the market for a new headset, and after doing some research, I found these on Amazon.
From what I have read, they are the exact same product as the Polk 4Shot headphones, except they do not come packaged with the headset adapter (it is still included with purchase, you just have to register your product and they will send you the chat adapter and a Boom Mic for better microphone functionality, as the drop down mic was reported to be too quiet). The set that I have included in the link are on sale for just over $60 for the white and greenish/gold, while the other colors are between $109 and $120. After checking out the actual 4Shot headsets, I have found the price to be $120+.
This is an easy way to get the $120 4Shots for half of the price, with all of the same functionality. The only difference between the two products is that the 4Shots come packaged with the chat adapter (you still have to register to get the Boom Mic I believe, so either way if you don't need these immediately, it makes sense to go with the cheaper version - at least to me).
If you can wait even longer, I believe the GameStop Black Friday ad specified the 4Shots will be on sale for $50, however it will be in limited quantities and you will have to 'fight' whatever crowds are there. Sorry if you don't support GameStop, just giving you another option.
For what it's worth, I believe I will be getting the set from Amazon and waiting to see if I can get a pair at GameStop on Black Friday. If I can get a $50 set on BF, I will either return the Amazon set or give them to my brother.
I apologize for the long response, just wanted to include everything I could think of from my research of this topic... solely looking at a set under the $100 price mark. While the Xbox Stereo headset and some Turtle Beach models might also fit in the sub $100 price range, I feel the price on these is too good to pass up.
