Make deviled eggs how you like. Place them in a dish, under a cover or plastic wrap.

Fill said container with smoke from one of these bad mama jammas. It's a neat little gadget that you can use to add some smokey-ness to all kinds of things without having to go all in on a smoker.

If I'm doing eggs for a big party or want to particularly flex with my egg game I usually had some little crumbles of brisket to the top for some extra pizazz.

The bar is probably using one of these with a variety of smoking chips. You could use peat pellets in one for sure.

Thats at the cocktail/bottle level. It definitely works, but at a larger scale you'd need a bigger setup or a lot of time.

Generally you just smoke the grain in some way. People have built all sorts of contraptions to do this at home, I believe there have been several posts in this sub about it. Here and here are some posts about doing this. Homebrewers have various methods as well. Example here.

Are you talking about making scotch, or smoking something already made?

if you got the space dry the outside as much as possible with paper towels then deep fry that shit.

but for something reasonable cast iron pan. render out some of the beef fat in the pan and pan fry less than a minute per side (assuming its a roast - if its a steak then i would do the same thing lol)

I don't think you would have an issue with the chips in the oven (assuming you soak them in water for a while prior), but I think you would have better results and it would be easier to use a smoking gun similar to this one.

Maybe you could do with a bit of a re-branding? If people are leaving your town, your staff is unmotivated, and you are bleeding money and thinking of selling, you could try to lightly revamp and bring in some new energy. You need to turn your spot into the destination for that 'something special' and try to bring the traffic to you.

You need to have those one or two items that people will come out to you for, unique special craft coffee drinks/cocktails and food that nowhere else in your town has, like a legendary burger or something outstanding along those lines and then a strong social media push. What is unique to your area? Any special dishes, etc? Get really good at something and become the specialty. Yep, I've seen Steven Raichlen do this on his Project Smoke show a few times. I remember him using a small smoke generator to infuse smoke into whipped cream I think, and he did the same with some potato chips. And that just drove me to search for what he uses on the show, and yeah that's expensive.
