It was [this book] (https://www.amazon.com/dp/B00BS03W5Q/ref=dp-kindle-redirect?_encoding=UTF8&btkr=1). Though I always recommend the red checkered Better Homes and Garden cookbook for starting out.

The funny part is that this is the kind of cookbook I like to read, which is very very different.

You need two books the first is professional baking text something like this http://www.amazon.com/gp/aw/d/1118254368?pc_redir=1410749379&robot_redir=1
The second is a book on management the only one I can personally recommend would be this http://www.amazon.com/gp/aw/d/0470125306/ref=pd_aw_sbs_1?pi=SL500_SY115&simLd=1

Here is another that I like to make
Gaufres (French Waffles)

I use a recipe from a baking text book that is a bit different. Here!

Each waffle has about 1-2 eggs in it. Heavy on cream and milk. These things are good enough to eat plain or just use them to make a bacon sandwich. Personally I don't eat them with syrup.

"Professional Baking" (edition doesn't matter)

both a recipe book and an instructional text(in fact is a textbook for the CIA), we use this indispensable volume all the time in the pastry kitchen
