I'm on vegan CICO not vegan keto, but I know people who are and they tell me they eat: Beyond Meat (1 gram net carb), Beyond sausages (2 net carbs), Gardein chick'n strips are 4 net carb, Some nutritional yeasts are 1 net carb, Mushrooms 1 net carb, bell peppers are 3 net carb per 100 grams, 2 cups of spinach = 1 net carb, chinese cabbage = 1.5 carb per cup, some wraps are 1 or 2 net carbs, low carb bagels, low carb cookies, avocado pesto, low carb bread, shirataki rice & noodles. Here's an example of a low carb pizza wrap. Many of the more nutrient dense veggies are lower carb, so that's good, but really vegan keto is going to require a lot of creativity with sauces etc. Just doing low carb is much easier obviously.

You should check out Protein Plus Peanut Flour; I'm a peanut butter fiend and this stuff is just great, especially given that you can get 32oz for $12.

(if you don't like frozen banana then low cal icecream also works, or frozen So Delicious Cocowhip)

1 cup Silk Protein Chocolate Pea, Almond, Cashew Milk

30 grams Protein Plus Peanut powder (16 grams of protein for 110 cal!)

49 grams frozen banana

total cals = 301

mix in blender and that's it!

I buy Protein Plus peanut flour and the ingredients are literally just dry roasted peanuts.

I add a little salt on my own.

Look for "peanut flour" -- it's the same thing but way cheaper and definitely won't have any sugar added

Yea, prime ship is gone on that one BUT ... a 2 LB package for $13.90 (about $0.44/ounce) is available with prime ship here

And yes! peanut flour = powdered peanut butter. to eat like peanut butter, add water salt + sweetener of your choice. Bonus? I can't go digging into these packages with a spoon like I do with regular PB

I bought some on Amazon. This is the kind I got. I think it tastes the same as PB2, but it doesn't have any sugar in it. If you like the PB2, this unit is a lot more flour and costs more than the little jar of PB2, but it's cheaper per ounce because you're buying in bulk.

The peanut flour is soooo great. I found it on Amazon, but I think it's also at vitacost (for cheaper, probably). The binder is the most interesting part actually, it's the Vitafiber syrup. It has a light sweetness and the consistency of honey. You can get it on amazon too

It is slightly more specialty. I order mine from amazon. It is like $14 for a large bag or $6 for a small bag and lasts for months. You can also find sugar free pbfit in many stores, but that has added monk fruit and salt and is much pricier.

I had been buying regular chocolate and adding PB2 because I like extra peanut flavor. However, when I saw Chris used peanut flour I decided to try that instead since it has less carbs and more nutritional benefits.

Whelp, it's pretty much perfect. If you're missing Chocolate PB I'd highly suggest investing in peanut flour.

Guess it depends on which one you get. This one is 4 net carbs for 30g. The chocolate peanut butter keto chow has about 6g net carbs while vanilla has about 4.

Stuff labeled as "peanut butter powder" such as this are generally pretty expensive. I try to look for "peanut flour" like this. They are the same thing just the flour doesn't have salt or sugar and isnt labeled as a specialty product, it's just a flour replacement. Both can be reconstituted with milk or water to make peanut butter and be added to smoothies and baked goods.
