The anime is adapted from the light novels. There are 11 volumes, 2 of them are officially translated by Yenpress and you can buy them Here and Here but the 2 volumes are already adapted by the anime. If you can read Japanese you should continue from volume 9.

There is also a manga adaptation which is also based on the light novels. The first arc that covers the first 3 episodes is this, the second arc the mansion arc is here, and the third arc that covers the witch cult and the white whale is here. If you can you should definitely buy the physical copy to support the creators, you can find it here. However the manga adaptation is still behind the anime, there are some deleted scenes here and there but if you only want to continue from where the anime ended, you should read the web novel.

The web novel is the original draft of the light novel (the light novel is an adaptation from the web novel) it's free to read. The whole fandom is most likely reading the web novel if they want to continue from where the anime ended. There is a fan translation compilation here

The visual novel is just a dating/fan service game. It probably won't be translated anytime soon.

Both have their qualities, as the Manga has pictures, and for the most part the LN is a actual Novel.

I'd say though, pick up the Novel. It's farther ahead than the Manga (not by much, by English TL's), but is still soooooooooooooooooooooooooo worth it.

However, I'd say pick up the Web Novel if you wish to continue the story and not reread the anime content. It's much farther ahead than the LN in terms of English TL's.

Do you read Japanese? If not, it doesn't matter since there isn't great overlap for english translated Web Novel and licensed light novel.

The light novels are up to Volume 4 which is still in Arc 3 that hardly has any web novel translation of. That includes for Arc 1 and Arc 2.

There's only a good amount of translated web novel Arc 4 and 6. So, start from Light Novel Volume 1 that lasts until Volume 4 in the beginning of Arc 3. Then read the web novel for the rest.

You can get them on Amazon by like 2019 when translations catch up... If we buy enough books season 2 should be out before the official novels catch up.

Re:Zero is being published, it'll be 2 and half years before that catches up to where we are in the anime now and fan translators tend to avoid licensed light novels.

At least with Attack on Titan we've always had fan translations to follow regardless of the anime. Then again light novels move much quicker than manga.

I would actually disagree - reading the book, this is a thought for thought translation, and it works very well. The writing structurally was lacking, and on occasion there were some oddities, but this is one of the better translations I've read. I bought the book (pre-ordered) on Amazon for 6.80, so I'm very happy about it!
