Parchment sheets. I HATE scrubbing pans, plus, it's so nice to slide the whole parchment onto the cooling rack and have another one ready to slide on and into the oven. So much time saved on both accounts. Plus the sheets are great for cookies because they are cut to fit the average cookie sheet. I am incapable of tearing a straight, properly-sized piece of parchment off a roll so the sheest were a game-changer (and money-saver, ever though they cost a bit more). Tip: Crumble your parchment then smooth it on the pan. It won't roll while you are placing your cookies if it's off a roll, and it's less likely to slide off the tray in my experience.

otoh they might need a new pin, in which case I recommend a french pin. these are tapered at both ends, giving you more control on areas that aren't stretching out evenly.
