Have you read Henry Petroski's book "Small Things Considered: Why There Is No Perfect Design"?

It has a couple pages about the design of the OXO Good Grips vegetable peeler, which led to a huge product line (originally intended for people with arthritis, but embraced by many "normal" people as just plain good design.)
