I would suggest this blog, http://101cookbooks.com/, and the author's second cookbook Super Natural Everyday. Everything I've made from it has been delicious. You can make a few things from her website to get a feel of her style before you have to spring for a book.
I just got Heidi Swanson's Super Natural Every Day a few weeks ago and everything I've tried so far has been delicious. Ditto Veggie Burgers Every Which Way.
Does he like Indian food? There are a lot of really good Indian cookbooks out there.
