As you note, the vast majority of evidence for human sacrifice by the Celts is from accounts by Roman writers, primarily Caesar but also Lucan and Tacitus.

Barry Cunliffe states that the archaeological evidence for human sacrifice is fairly thin. The most convincing find is the Lindow man, recovered from a peat bog in Cheshire and dating to the first or second century AD. The man was strangled, hit on the head, and had his throat slit, which suggests a ritual killing. The notion of a "three-fold" killing in this manner is apparently found in later (Christian era) Celtic literature. Other bodies have been recovered from Celtic areas, although the case for their ritual sacrifice is less clear cut. As far as I know, most of the "bog bodies" found throughout Europe are associated with Germanic peoples, whose practice of human sacrifice is well-attested by both archaeology and literary accounts, and not the Celts.

I'm by no means knowledgeable at all about the Ancient Celts, but a quick search of my University's library came up with this:

Did a quick search on Amazon and it has good reviews, which all say it is very informative with regards to Celts throughout the ages.
