I've heard good things about the Drezner book that /u/Volsunga recommends. Personally, my Intro IR course used Oxford UP's The Globalization of World Politics as the main compendium with specific supplemental articles for each major theory and issue we covered.

Hmmmm this is a hard one. PPE isn't quite my field of study but I can give you some advice on the types of suggestions people will give and how to Use them.
First off I'm assuming that you're going to want to talk about these books at you're interviews and in your personal statement, this might not be the case but hopefully it'll be useful anyway.
First of there will be the books that are actually a good introduction to the topic. Thing's like 'A Very Short Introduction to ...' fall into this category, there very well written, often by some of the most esteemed experts in their field, but you should never mention that you've read them. People can be snobby, particularly those applying for and teaching PPE, so give them a chance to air their own prejudices!
The second type of book are those that are aimed at people starting those courses. In my own area, International Relations, it would be books such as this or this. These books are worth reading, not only because they will give you an academic introduction to your topic but also because they will give you an idea of exactly what you will end up studying. When I was deciding what to study at university I bought an Introduction to International Economics, as soon as I realized exactly what this entailed I changed to a different subject. These books could be worth mentioning in an offhand way, but remember this is what you would be reading in your first year anyway so don't e fooled into thinking that they're giving you anything other than a very basic introduction to what you will be doing at university.
The third kind of book is the sort of book that people will recommend because there the sort of books we should all read but haven't. For example, reading Kant's Critique of Pure Reason is perfect for people studying philosophy right? Wrong, its far to advanced and boring for people still doing their a-levels. Put simply, Prof's won't believe you've read it and everyone else will think your being pretentious.
What you want are books that strike a happy medium between all of these categories. Unfortunately the only people who can really pick out such a book are those that are actually studying you're subject. Otherwise its incredibly hard of being able to pick out books that will be taken seriously, or at least recognized, by those stifling through your applications, but nothing that screams lying or pretentious. As such you want a book that they will recognize and will deem as interesting and but not incongruous.
A hard ask isn't it? I hope someone who can answer this question shows up here. If not my advice is to try SA and 4chan's literature boards, they often have some highly educated lurkers. If not you could always try what I did and pick out a book that meets the criteria an hope for the best.
