Dried beans offer more bang for your buck! You should soak them though, overnight is best. Put them in water to soak a few hours before you go to bed, empty the water and then soak them again over night, it helps to remove the indigestible fibers that can make people toot!

I cannot upvote ParityPrat enough for their suggestion of "becoming vegan". I'm a health vegan too, and I've owned that book for almost 8 years, its VERY dry as a "fun" read, but when my doctor recommended I become vegan last month, I plowed through 80 pages in one night (with peggle breaks in between), and now I know more about food than I EVER did as an omni.

I was diagnosed as Anemic BEFORE becoming vegan, as well as multiple other maladies, so in addition to my tons of dark greens, nut butters, special and diverse oils, ect, I take a MASSIVE amount of vitamins. the only thing I can say about this, because you CAN get enough nutrients from food, is to make sure you make an intake plan for your vitamins because vitamin C can help assist in absorption of iron, but calcium can block it. so, i take my iron in the morning with my vitamin c, a glass of OJ full of psylium husk powder, and my Biotin. Calcium is taken at night before bed, so there is a good 12 hours between the two at all times. I only now feel weak and dizzy during my cycle, when lots of women can become slightly anemic anyway. that doesn't mean you have to be though.

finally, I guess the biggest frustration/change for me in this veganism is THE TOTAL OVERHAUL OF MY FOOD LIFE. nothing, NOTHING is the same. I'd recommend a book i just got for Christmas last night, The Vegan Slowcoooker. not endorsing amazon, just the first link that popped up. Slow cookers are AMAZING, it really is set it and go. Chop some veggies and clean some beans before bed, turn it on for the time recommended and in the AM, pull the pan out, stick it in the fridge to set the flavors, then when you're home, reheat it in the oven, and its seriously like you did no work at all. freeze half of it immediately for those nights you just have NO energy (but you'll have less of them), and then just throw your food in a pan on the stove, one regular sized pot of food should last you closer to a week than not, and non meat based foods stay viable for almost twice as long.

I've made a number of Kathy Hester's recipes. She has a ton of them available for free on her web site, Healthy Slow Cooking. Don't let the name fool you, she has all sorts of recipes, not just for slow cookers (the last one I made was this soup). In fact, she just wrote a new book about vegan air frying.
