Pretty much ONLY an electric coil burner. I use this one from amazon for $20. It works perfect and doesn't have an automatic shut-off like most.

This one is fantastic. It at most takes at most 10 minutes to heat up so you can prep everything while they're heating up.

I have a Bradley electric smoker, which is not $200 though it does work extremely well.

When the digital generator dies someday, I thought I would take an old BBQ (free or near to it) and use that as a smoker. Pull out the gas vents and just put some charcoal in a container (say a large soup or tomato can) and then some wood chips in a smaller can that sits on the charcoal, generating the smoke. The BBQ has a rack or maybe a second level for the meat.

You may not get fine temperature control, but it should last forever and for many things (ribs sausage etc.) the exact temp is not that critical. Salmon is one thing where I prefer a very low temperature.

If you want electric, get one of those single coil cooking elements. Last time I looked I think you can get them brand new for $20 (ok, you can). Simple can and wood chips on that to generate smoke. If you want some heat, get a double element one - one for the wood, one to add just heat.

The more I smoke the more I realize that it isn't that complicated.

I just recently bought a 1000W coil burner from Amazon because I was tired of my natural coconut coals taking so damn long on the stove. Lo and behold I was skeptical because I know those electric stoves can suck so I wasn't expecting much. Honestly, if you group these coals up close to each other, this coil gets so hot that that the coals sort of form a flame between each other that boosts its lighting time. All in all, the coil is fantastic and lights my coals up in no time. I set them up and in the time it lights I barely have time to clean my hookah and pack a bowl before the coals are done and ready to go.
