You may also want to try taking a probiotic supplement. I use this one from Trader Joe's and I do pretty well eating/drinking dairy. The nice thing about a probiotic is that it can help in a manner that is less temporary than enzyme supplements, since it helps rebuild the population of gut bacteria you need to digest dairy.

I took align for a very long time, and it did help at first but like you said there's a die off effect. I don't think I'd recommend taking two a day, I don't know how much it would help. And I've also tinkered with the idea of taking two probiotics which is highly recommended to NOT do by my physician. Instead I researched a little more and found that probiotics that don't have to be refrigerated are likely to not do much for your system, so I found a new probiotic that I've been taking for about a month and a half, which has been working (still have random off days but I can't ask for a miracle pill).
