You could try Viking warrior conditioning. Kettlebell snatches 15 seconds on, 15 off. Start with a weight where you can do 7 reps per 15 seconds for 40 minutes, work up to 9 reps, then move up to the next kettlebell size.
If you want to increase your VO2 max with kettle bells I'd recommend Viking Warrior Conditioning. But the important thing is to find something you enjoy (or can at least tolerate long enough to get it done).
