A grill pan is real helpful for veggies. I loooooove slicing up zucchini and tossing it with a little olive oil, kosher salt, and pepper. Grill in the pan until they start to get char on them.
Grilled salads are downright tasty too. Slice some romaine hearts in half lengthwise, brush them with olive oil, and then sprinkle on kosher salt and pepper. Grill them until they are a bit soft, some charring is good. Then, have assorted chopped veggies, ideally grilled but done in a pan is ok. Peppers, mushrooms, squash, corn, etc. Cook the veggies in larger pieces so they can be chopped after grilling. You can get away without the grill pan this way.
Grilling lends itself more toward whole veggies than prepared vegetarian dishes. The grill pan opens it up a lot more, and I generally love any veggie more in my grill pan than from the stove. Just about any vegetable though, slice it so it doesn't fall through the grates, and brush will olive oil, salt, & pepper.
A stainless bbq vegetable grill basket fits perfectly in the top of a 10 gallon kettle and is thick enough to easily support a full batch of wet grain.
Don't use an oven rack - you need something that's inset a bit into the kettle or else wort will spill over the edge. Some racks are too weak to hold the grain bag without bending permanently either.

Making Alfredo tonight (just using romano cheese cause i was too cheap to get parmesan ),
with grilled chicken breast (rosemary, sage, salt, pepper, and olive oil),
and grilled broccoli (salt, pepper, jarred minced garlic (super cheap)) in a vegetable basket, this one is amazing. I got one for my dad and said this was the only one he has ever used he liked.
