I picked up these baskets recently and they really cut down on my coal usage for grilling.

Before, I'd lite half a chimney and dump it on another full chimney worth of coals to get a hot/cold side in the kettle. With the trays I just need whats in the chimney since it keeps them close and maintains the fire, rather than having a pile to maintain the contact. I havent really measured, but it feels like I'm using less than half the charcoal I was before. At least for indirect heat.

Only the wings in the center (obviously) are smoked. The rest are being grilled over direct heat. On a whim, I decided to try some new toys I acquired during a squirrel moment at Lowe’s.

No clue on temp, but I used my Weber 18” that the last renter in the house left behind, along with Weber 7403 Char-Basket Charcoal Briquet Holders with a water pan between, lump charcoal, and pecan chips. Smoked for about an hour and added the grilled wings to the grate until they were done and served. They were fall off the bone tender with a very smoky taste.

They disappeared quick!

When it's just the wife and I for a for a steak and maybe one other item, I use a charcoal basket. It greatly reduces the amount of charcoal needed for our 22" kettle grill, and you still get even heating in the center of the grill.

You can pick up Weber's charcoal baskets for $15 and they'll last for years. They also help stack up your coals to get them closer to the grilling grate, giving you a super-hot sear zone and a clearly defined indirect heat zone. You can find them here:

I use them for everything. Using a KettlePizza, I get the grill to well over 900° F and my charcoal grate is straight as an arrow after years of abuse.

As /u/mytummyaches pointed out, the Slow n' Sear serves the same purpose, albeit at a much higher cost. That said, it also gives you the ability to do some excellent low-and-slow cooks, which is worth the cost of admission if you're into that sort of thing.

If you want to do it with charcoal, just use a charcoal starter. Get the Weber one, should be $20-25, they get extremely hot which is perfect for stir fry. I'd still recommend grabbing a small grill like the Weber Smokey Joe just to use as a stand for the charcoal starter unless you want a hole in your lawn/driveway/wherever you do this. You certainly don't need a 22.5 grill to stir fry over charcoal.

If you have a flat bottom wok, you could also do it straight on the 14.5 grate. Just get these little charcoal baskets and fill them up, that amount of charcoal gets plenty hot for stir fry, and the grate on the 14.5 is very close to the coals. These are actually what I use on my 22.5, the rest of the grill is just wasted space.

I bought a Weber 22.5" grill late last year too. These have been a tremendous help in setting up hot/warm zones on the grill.

For regulating your heat, you can also put your lid on slightly askew. Gives the uncovered part of the grill a lower, steadier temp which is great for doing something like a reverse sear like they mention here.

I was trying to keep it between 275 and 300. I used these to keep the charcoal off to one side and I put a pan with a little beer in it under the cool side. Idk if that did anything but I saw it in a video and figured it couldn’t hurt.

In the minion method, you dump the hot coals on top of unlit coals. They may try to fall over onto your indirect zone, but it shouldn't be hard to setup.

If you have a weber kettle, this could come in handy.

I use a weber kettle to smoke. I just use a weber charcoal basket. Light the coals in a chimney (filled about 1/2 way), dump them in the basket, open all vents, and let it sit for 15 min or so. The temp should be right around 200 - 250. If it's too low, add more coals and leave the top off for a while. If it's too high, either play with the vents, or just let the coals die down somewhat. The trick is to just have a small pile of coals that you can keep adding to or letting die down as needed. I rarely use the vents to control the heat anymore. It's just too finicky on a small bbq.

Once you've got it where you want it, throw the meat on the opposite side of the kettle and just keep an eye on it. You'll need to add charcoal every so often. I just put a few pieces of unlit on top of the lit ones every half hour or so.
