X-Statix only ever had the one run, by Peter Milligan. Get the omnibus if you can, it contains all the relevant issues, or if you have Marvel Unlimited, start reading at X-Force #116 - that's where the team debuts, and they operate as X-Force for 12 issues until they're forced to change their name and that's when you switch to reading X-Statix.
If you HAVE to start from the beginning just read the first 24 issues, you can then skip over to Claremont's era
My recommendation would be to either start with Chris Claremont's 1st era (aka 70's) & 2nd era (aka 80's) on Uncanny X-Men or from 2001-ish (aka modern X-Men) time period onwards onwards. Either way just skip the 90s for now, you can alway go back to that later.

Mulligan/Allred X-Force into the new title X-Statix is game-changing and I don't know why it isn't talked about more. I'd read it in singles but I lucked into the omnibus on a great (sub-$40) sale and it just blows me away whenever I crack it open.
Well, one of the most famous ones is X-Men: God Loves, Man Kills by Chris Claremont and Brent Anderson. I'd also highly recommend the X-Statix series by Peter Milligan and Mike Allred, which you can get in short volumes or omnibus form.
Here are some good values in comics to think about:
X Statix Omnibus - Approx $45 dollars so you'll be paying roughly a dollar an issue for a really nice hardcover book. Most importantly the Mike Allred's pop-art style is beautiful and Peter Milligans writing is amazing. This is a book about celebrity and comics. It manages to both be very cynical, but also have great sincere moments. The collection includes the entire run so if you are a competitionist reader I imagine that is appealing also.
Ultimate Spider-man - This recommendation only works if you are willing to read used books. However, if you are, you can find these volumes used for dirt cheap. You can get volume 1 for 6 bucks and volume 2 for 60 cents. This is the most popular book of the "ultimate" line and really holds up. I think it is the best spider-man book of the last decade.
Runaways (digests) - Everyone loves this series. If you've read and not liked it, you might be a bad person. Volume 1, Volume 2, and Volume 3 are available for 5 bucks each. The story follows a group of teenagers who find out their parents are the villains. It is really interesting and those first 3 volumes make up a really satisfying story arc. Note: the digest versions are smaller than a normal trade paper back or graphic novel which is a part of why they are so fairly priced.
Hawkeye - This is my favorite mainstream superhero comic. It is brilliant and fun and funny and emotional and experimental. The story follows hawkeye when he is not an Avenger. You can get Volume 1 and Volume 2 for less than ten dollars a piece.
King City - Don't love superheroes? Just want to read something different? Check out King City. This volume just won and eisner and is written/illustrated by the brilliant Brandon Graham. The story follows a catmaster who is kind of like a magician whose power is to manipulate his cat into various tools. It is pretty adorable and the characters are sincere and thoughtful without being overbearing. Plus it is only 11 dollars for 400 great comic pages.
Rex Mundi - These omnibuses are criminally inexpensive. The first and second one are only 14 bucks each. This is an often overlooked book, but it is completely brilliant. The story is an alternate history/religious intrigue story set in world slightly like our own except with more secret societies and the existence of some divine magics. The book reads sort like a good version of The DaVinci code with more grand politics. you can read the first chapter to check it out before you buy it
